EASY AND DELICIOUS EDIKAIKONG SOUP



I'm more of an efo riro person because I prefer to cook with a lot fresh pepper[scotch bonnet].This method ill be using doesn't allow for all my extras lol......so ill just stick to using the easiest way to prepare this dish. I know when some people hear the name, they'll get scared and think the soup is from another planet! EDIKAIKONG is also known as vegetable soup.

INGREDIENTS;
  • Fluted pumpkin leaves/Ugwu leaves
  • Water leaves
  • Grounded crayfish
  • Cameron pepper
  • Beef 
  • Ponmo
  • Dried fish
  • onions
  • Palm oil
  • scotch bonnet
  • salt
  • Maggi cubes

INSTRUCTIONS;
PREP-TIME: 30-45 MINS COOK-TIME:25 MINS
  • Cook your meat(depends on how u want it), ponmo
  • wash the vegetables and dried fish
  • Put boiled meat, ponmo and dried fish into a pot and turn on the heat
  • pour in the water leaves,add salt,blended pepper, cameron pepper, onions, grounded crayfish and then cover for 10mins


  • After the 10mins pour in your palm oil depending on the quantity of the pot of soup but you don't need too much oil. I used 1 cup.
     
  • Pour in the the ugwu leaves,I  add more pepper and salt

  • Open the pot and then stir together. reduce heat and let it simmer for 5mins


  • And its ready.
 NOTE: I didn't use any water in the process of making this dish and you can see in the picture above that there's water at the sides of the pot. And also try not to over cook your vegetable that's why i indicated the cook time.

  1. I've heard a lot of good things about this soup, but I'm yet to try it. This is a good look. For me, I'll have to substitute the ponmo for something else. But seems easy enough for a rookie like myself.

    I've also heard good things about Afang as well.
