CATFISH PEPPERSOUP WITH YAM
I’ll say this is one my easy and quick meal when I don’t feel like being in the kitchen that long or when I have an “August visitor”. This is a very common and popular meal amongst the niger deltas and it’s also referred to as “UKODO”. Travelling to places like Warri and Ugheli, I’ve learnt that they don’t joke with this meal. Did I say it’s also one of my favourite meals?? You don’t have to limit yourself to just yam tubers, sweet potatoes can be also used in making this dish more “sweeter” just like the name implies lol...
Let’s get into it
Prep time: 5mins. Cooktime:30 mins
INGREDIENTS:
- Whole catfish(cut in pieces)
- Yam cubes
- Cameron pepper/scent pepper
- Pepper soup spices
- Scent leaves
- Knorr cubes
- Salt
- Wash fish with lime and set aside
- Put fish into a pot with water
- Add the yam cubes and let it cook for about 5 mins
- And then add the peppersoup spice and Cameron pepper or scent pepper, add salt then cover and let it cook for 10-15 mins
- Taste for salt and then add the knorr cubes
- When it has thickened and the water reduced, you can add the scent leaves( I add this at the end because I don’t want it to over cook)
- Turn off the heat and let the steam cook the vegetables
- It’s ready!
NOTE:This is a traditional way of making it. You can add other vegetables like bell peppers(green and red peppers) carrots and so but I prefer mine this way.HEALTH BENEFITS OF EATING FISHEating fish is an important source of omega-3 fatty acids. Some good choices are salmon, trout, sardines, herring, canned mackerel, canned light tuna, and oysters.

ReplyDeleteYummm. Only thing is, I don't eat fish, most especially Catfish. But I'm guessing one can swap the catfish with goat meat and serve it up with the yam. Delicious :)
